I have recently discovered Quinoa (pronounced Keen wa or Kee No Wa).  It is very filling and quite yummy.  Even my daughter, who has texture issues with food, enjoys this salad that I have been making.  I thought I would share my recipe.  

I found this great recipe on pinterest.  The original link is from this blog.   I followed the instructions from the blog as they are complete and easy.  I did change my ingredients slightly.

Here are the ingredients I used…

  • 1 cup dry quinoa
  • 2 cups water
  • 2 cups sliced grape tomatoes
  • 1 cup spinach, chopped
  • 1 cup diced cucumber
  • 4 ounces feta cheese (about a half cup)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons of epicure tapenade spices (no longer available, however they have some other spices combinations such as greek that would just as well)
