Kale salad

Our family has been receiving a local produce pack for the past 3 years.  It has opened our minds to many new foods and some great recipes.  Today we received out first one for the 2013 season filled with lots of local veggies.

One of those foods is kale.  Kale is chocked full of nutrients and so good for you.  However, it is a very challenging food to find the right recipe for.  Ask most people and they will tell you make kale chips.  Kale chips are good but my family was not sold on them.  In fact I think I was the only one eating them.

My oldest son decided that he would find a salad made with kale and now we look forward to his kale salad.  I thought I would share the recipe for his yummy salad as it is quite simple.

Kale Salad & Fresh homemade pizza


Ingredients:

  • Extra Virgin Olive Oil
  • Sea salt
  • Hard boiled egg
  • Spring Onions
  • Diced tomato
Cut the stem away from the kale leaves and finely chop the leaf.  Rub olive oil and sea salt onto the chopped leaves.  Using your clean hands works best.  Let sit while you chopped the other ingredients and cook the eggs.  The sea salt and olive oil will soften the kale.

Add remaining ingredients and enjoy!
